Minced Pork Eggplant is a classic home-style dish that, through simple cooking methods, allows the eggplant to absorb the deliciousness of the minced pork. The soft and tender texture of the eggplant perfectly melds with the fragrant minced pork, making it a great dish to serve with rice.
For you to prepare(for 1-2 people)
- Pork Belly (150g/5.29 OZ)

- Recommended: Organic pork from Whole Foods, pork from Costco, or purchase at Asian supermarkets like H-Mart or Da Hua to prevent odor.
- Eggplant (300g/10.58 OZ)
Tip:
1. Ground beef can be used for convenience and time-saving.
2. You can add chopped scallions for a pop of color.

1.Step Cut 300g of eggplant into small pieces, season with salt and marinate for 10 minutes. Rinse with water and squeeze out the excess moisture.

2.Step Cut 150g of pork belly into minced meat.

3.Step Heat a pan and pour in 40ml of oil. Once the oil is hot, add the eggplant and stir-fry over high heat for 3 minutes until the surface turns slightly yellow. Remove and set aside.

4.Step In the remaining oil in the pan, add the minced meat and stir-fry over medium heat for 50 seconds until it breaks up and changes color. Add the Mapo Tofu seasoning and stir-fry until the red oil is released.

5.Step Add the eggplant and 100g of water, bring to a boil, then simmer for 2-3 minutes over low heat. Thicken the sauce with a starch slurry (starch to water ratio of 1:3), and then the dish is ready to be served.

6.Step Sprinkle with chopped green onions
